During the weeks, I will make an easy version with pre-lutal bacon and shop bought salsa. At the end of the week, I went with homemade roasted tomato salsa and stayed in our family coffee.   • 4 corn tortillas

  • 4 large eggs

  • Kosher salt and new ground black pepper
  • 4 cut crispy bacon, chopped

  • 1 ripe avocado, beaten

  • 2 tablespoons finely chopped raw onions

  • Some new leaf cilantro

  • 1/4 Cup Sboky Tomato Salsa (bought overtired or homemade)


  1. In a small bowl, crack eggs and whisk with a tablespoon of water (or milk if you want this creamer), pinch of koshers of salt and new black pepper. Hot a skillet of medium-low heat with enough butter or olive oil to easily coat under the pan.
  2. Add the eggs to skill and cook, stimulate a spatula, until you are crushed by your choice. Remove from heat.
  3. Corn tortillas are hot in a dry skill or directly to a flame of gas to soft and slightly charred.
  4. To achieve, spread the burning avocado in each tortilla.
  5. Top scrambled eggs, chopped bacon, raw onions, cilantro, and a generous tablespoon smoky tomato salsa. Serve warm and enjoy!
